I like to cut up veggies (including asparagus) and tossing them with olive oil, balsamic vinegar and minced garlic, then cook at 425 for about 20 minutes. Tastes awesome but I've been eating it for a couple of weeks now. Any other ideas for baking in the oven?Any great recipes for baking asparagus?
Asparagus, Tomatoes And Cheese, Baked Recipe
1 bunch asparagus, washed, peeled
3 tomatoes, chopped
1 cup American cheese, grated (or your favorite cheese)
Seasonings to taste-highly seasoned
Boil the peeled asparagus in salted water for about 20 minutes.
Remove from water.
Place asparagus in a small baking dish, all the tips pointed in the same direction.
Mix cheese, seasonings and tomatoes together.
Spread the mixture over the asparagus tips.
Bake in hot oven for about 8 minutes.

Autumn Pork Casserole.
480 grams NZ Pork leg steak, trimmed of all visible fat
2 teaspoons olive oil
1 medium onion, chopped
1/2 cup water
2 stalks celery, sliced
2 apples, peeled and sliced
1/2 teaspoon dried thyme
freshly ground black pepper to taste
200 grams mushrooms, sliced
Cut pork into serving sized portions.
Heat a heavy-based saucepan and brown pork on all sides, remove and set aside.
Add oil and heat, then add onion and cook until golden.
Return pork to saucepan and add remaining ingredients, except mushrooms.
Cook for 15 minutes and then add mushroomsand asparagus.
Cover, heat until simmering and cook until the pork is tender approximately 30-45 minutes longer.

Asparagus Casserole
Ingredients:
2 to 3 pounds of asparagus, or 18 to 20 ounces frozen asparagus
6 tablespoons butter or margarine
3/4 cup soft bread crumbs
1/4 cup all-purpose flour
1/2 teaspoon salt
1/8 teaspoon pepper, or to taste
2 cups milk
1/2 teaspoon Worcestershire sauce
3/4 cup grated mild Cheddar cheese
2 ounces drained pimiento, 1/4 cup chopped
Preparation:
Wash asparagus, remove woody part of stalks and cut into 2 1/2-inch pieces. Cook in boiling salted water until just tender. Drain and place in a shallow baking dish or casserole.
Melt butter in saucepan. Mix 2 tablespoons of the butter with the soft bread crumbs; set aside for topping casserole later. Blend flour, salt, and pepper into remaining butter in saucepan. Continue cooking and stirring over low heat. Gradually add milk, stirring until thickened.
Add Worcestershire sauce, pimiento, and cheese; stir until cheese is melted. Pour sauce over asparagus in casserole; top with buttered crumbs.
Bake at 350掳 for 20 minutes.
I like to just do asparagus with evoo and salt and pepper baked. But to change it up, I will add parmesan cheese, onions, bacon, etc. I just saw the Barefoot Contessa make a roasted vegetable dish that looked wonderful on the today show.
Oven-roasted vegetables

INGREDIENTS
鈥?2 small fennel bulbs, tops removed
鈥?1 pound fingerling or small potatoes
鈥?1/3 cup good olive oil
鈥?Kosher salt and freshly ground black pepper
鈥?1 pound French string beans (haricots verts), trimmed
鈥?1 bunch thin asparagus, ends removed, cut diagonally into 3-inch pieces
鈥?1/4 cup freshly grated Parmesan cheese
DIRECTIONS
Preheat the oven to 425 degrees.
Cut the fennel bulbs into 6 wedges each, cutting through the core to keep the wedges intact. Place on a sheet pan. Cut the potatoes in half lengthwise and place them on the pan with the fennel. Drizzle the olive oil on the vegetables, then sprinkle with 2 teaspoons salt and 1 teaspoon pepper. Toss with your hands.
Roast the vegetables for 25 to 30 minutes, until the potatoes are tender, tossing once while cooking. Toss the string beans and asparagus with the roasted vegetables and roast for another 10 to 15 minutes, until the green vegetables are tender. Sprinkle on the Parmesan cheese and roast for another minute or two until the cheese melts.
Sprinkle with salt and pepper and serve hot.
I roast asparagus as you do. That's my fave prep. I sometimes add some fresh lemon juice or Meyer lemon zest. You could wrap the roasted asparagus in prosciutto serve cold. Roast the asparagus, let chill, %26amp; serve over butter letttuce surrounded with cherry, grape or pear tomatoes %26amp; fresh mozzarella balls. Drizzle with a little extra evoo, fresh grated black pepper %26amp; salt, to taste.
Toss the asparagus as usual with olive oil, salt and pepper. Mix together about 1/4 cup each, breadcrumbs and parmesan cheese and sprinkle over the top. Bake as usual. Of course, you can add garlic if you'd like. Enjoy !
I don't recommend baking asparagus. The best way too cook it is to cut of the dry, dead bottom, and put them in salty boiling water for 30-60 seconds. The quickly take them out and put them in ice water. Then squeeze half of lemon over them and enjoy.
Boil your asparagus in garlic, or bake it with garlic and chicken.
