Recipes using asparagus?

CHICKEN STRUDEL WITH ASPARAGUS AND


PROSCUITTO





1 cooked chicken, shredded


3 cups cheese, grated


spring onions, chopped small


8 mushrooms, chopped


1 small onion, diced


3 cloves garlic, crushed


2 rashers prosciutto (or bacon)


cracked black pepper, to taste


陆 tsp salt


pinch of cinnamon, cumin and chili powder


1 tin asparagus spears


1 puff pastry sheet per person


sesame seeds





Place first nine ingredients in bowl and mix with hands.


Brush edge of pastry sheets with milk and place mixture in middle.





Add 录 of the asparagus spears to each mix





Fold over sides and ends to make a parcel. Turn over and make a couple of slits in top to release air, brush with butter, sprinkle with sesame seeds and cook in hot oven until brown.Recipes using asparagus?

INGREDIENTS


1 (10 ounce) can refrigerated crescent roll dough


1 tablespoon olive oil


4 slices provolone cheese, halved


4 slices Swiss cheese, halved


4 slices mozzarella cheese, halved


8 asparagus spears, trimmed and cut in half


2 tablespoons olive oil, for drizzling (optional)


1 tablespoon dried Italian seasoning (optional)











DIRECTIONS


Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.


Unroll and separate dough into 8 triangles; place on a lightly floured surface. Using 1 tablespoon of olive oil, lightly brush the top of each dough triangle. Place one piece of provolone cheese, Swiss cheese and mozzarella cheese on the wide end of each triangle. Put one piece of asparagus on top of the cheese. Roll each dough triangle around the cheese and asparagus toward the point and press to secure. Arrange on a baking sheet at least 2 inches apart.


Bake in preheated oven until lightly brown, 13 to 18 minutes. Remove from the baking sheet to cool on wire racks. If desired, drizzle with 2 tablespoons olive oil and sprinkle with Italian seasoningRecipes using asparagus?

2 cups chicken broth


1 cup chopped asparagus


1 small onion, finely chopped


1 Tbsp butter


1/4 cup chopped parsley


1 cup heavy cream or half-and-half


1 or 2 tsp arrowroot


Salt


freshly ground black pepper


Chopped chives or chopped parsley





Instructions:





Pour the broth in a pot and add the asparagus. Lightly saut茅 the onion in the butter, and also add to the broth along with the parsley. Bring to a boil, cover, and simmer until the asparagus is tender. Drain the broth into a bowl. Put the vegetables through a food mill or puree in a food processor. Combine with the broth, and return to the pot. Stir in the cream or half-and-half over low heat. Mix the arrowroot with a little milk, and stir into the broth. Continue stirring until the soup thickens and comes to a boil. Taste for seasoning. Serve with chopped chives or chopped parsley.
Par boil the asparagus. Chopped it up into 1/2 long pieces. Add asparagus, smoked salmon, chopped browned red onion, and swiss cheese and some fresh dill sprigs to a omelet. Garnish with finely ground fresh black pepper and sea salt if needed.
Add some cooked asparagus to scrambled eggs and cheese. You can even add cooked meat like sausage, bacon or ham.
I like grilled asparagus.


I just line 'em up on the grill and brush them with garlic butter.


OR...I brush them with a mixture of olive oil, red pepper flakes, kosher salt, dried parsley, and a little black pepper.


Grill them for only a couple minutes on each side.
This is a great favorite in my household. In fact, the only way I like asparagus better is steamed with a rich cheese sauce.

Marcia's Asparagus Casserole





2 cans asparagus spears or 1 lb fresh asparagus, trimmed


1 stick butter, melted


2 cups cracker crumbs


4 sliced hard boiled eggs


陆 lb. Grated cheddar cheese


陆 cup slivered almonds


1 can mushroom soup





Mix cheese with the cracker crumbs. Add asparagus liquid to the soup and heat. Layer casserole in 1 %26amp; 陆 quart greased dish beginning with cracker mixture, asparagus spears, sliced eggs and mushroom mixture. Repeat. End with cracker mixture (3rd time) Drizzle butter over the final mixture.





Bake 35-45 minutes until hot and bubbly.





May freeze. Serves 8
drizzle the sprigs with olive oil, place on hot grill or griddle and cook untill charred slightly. Serve on the side of a fat juicy medium rare ribeye steak and a large baked tater with sour cream and butter and enjoy it like an orgasm.
Preheat the broiler of your oven.





I just steam the asparagus until they are tender but still crispy, season with salt and pepper.


I make a sauce bernaise. Then I take small bunches of asparagus and roll them into a slice of cooked or baked ham. I place them on a baking sheet covered with aluminum foil and pour on the sauce bernaise . Put it under the broiler for a minute or a minute and a half. Not longer. Take out, place on plates and sprinkle with pamesan cheese.
Approx 24 aspagus spears


Approx 12 pieces of bread


6 slices bacon cooked and crumbled


6 green onions chopped


6 oz cream cheese at room temp


3 tablespoons grated parmessean cheese.

Trim end off of asparagus spears and ';peel'; if you want. Leave them long though. Trim the crusts off the bread. Roll each piece with a rolling pin or heavy glass.





Mix cream cheese, bacon, parm, and green onions together.





In center of bread smear some cream cheese mix, put 2 or 3 asaragus (depending on size) on top. Roll the bread around the asparagus and seal with melted butter.





Brush each bundle with melted butter and sprinkle with paprika. Bake at 350 for 10-15min.








The following works well with asparagus, green beens, brussel sprouts (peel off each leaf-it takes a while but is worth it) etc... Chop some bacon, and fry, add a handful or 2 of pine nuts, then add the veggie. Cook until nuts are toasted/brown and veggies are crisp tender. Sprinkle with salt and enjoy

Trim a bundle of asparagus and lay it out on a broiler dish. Drizzle olive oil and garlic over the top and put in 350 degree oven for 15 min. Sprinkle a little parmasean cheese on top and cook extra 5 min. Serve hot - YUMMY!

I've made this a couple of times and always get asked for the recipe. Nice and easy but looks impressive





Chicken Scallopine





4 (about 800g) chicken breast fillets





2 tbs olive oil





2 garlic cloves, crushed





1/3 cup (80ml) verjuice





1 cup (250ml) chicken stock





11/2 tbs small capers, drained





60g soft butter, chopped





2 tbs chopped chives





12 (about 650g) chat (baby coliban) potatoes





11/2 bunches asparagus, trimmed





1. Use a sharp knife to slice each chicken breast in half horizontally. Place a chicken fillet between 2 pieces of plastic wrap and gently pound with a meat mallet or rolling pin until 1cm thick. Repeat with remaining fillets.





2. Season chicken with salt and pepper. Heat the oil in a large heavy-based frying pan over high heat. Add half the chicken and cook for 1陆 minutes each side or until golden brown and cooked through. Transfer to a plate and cover with foil. Repeat with remaining chicken.





3. Add the garlic to pan and cook, stirring, for 30 seconds or until aromatic. Add the verjuice and cook, stirring, for 2 minutes or until reduced by half. Add the stock and capers and cook, stirring occasionally, for 3-4 minutes or until reduced by half and thickened slightly. Remove pan from heat and stir in butter and chives.
