Be sure that your asparagas is still good! Trim off the fibrous ends. You can either saute asparagas or steam it until it is crisp tender. If you saute, add some pancetta, or chopped bacon to enhance the flavor. When you plate it, toss with parmesan cheese. Or, you can saute it, make a sauce of lemon zest, lemon juice, and butter and toss together. I like mine plain sometimes with good old fashioned mayonaise!Good asparagus recipe?
wrap them in bacon salt pepper to taste then in the oven for 20 minutes,then cook 2 eggs in a small pan when done put them on top of the asparagus sprinkle some Parmesan cheese and serve them with withe rice
Asparagus and Cashews
INGREDIENTS
2 tablespoons olive oil
2 tablespoons sesame oil
1 teaspoon minced fresh ginger root
1 bunch asparagus stalks, ends cut
1 tablespoon soy sauce
1/2 cup chopped cashews
DIRECTIONS
Heat olive oil and sesame oil in a wok over low to medium heat. Add ginger, and stir-fry until slightly brown. Add asparagus, and stir-fry for a few minutes before adding soy sauce and cashews. Cook until asparagus is tender but still crisp and bright green, stirring frequently.
Sauteed Garlic Asparagus
INGREDIENTS
3 tablespoons butter or margarine
1 bunch fresh asparagus
3 cloves garlic, chopped
DIRECTIONS
Melt the butter or margarine in a large skillet over medium-high heat. Add the garlic and asparagus spears; cover and cook for 10 minutes, stirring occasionally, or until asparagus is tender. If you like your asparagus well done, reduce heat and cook an additional 10 minutes.
Asparagus with bacon
4 slices bacon, diced
1/2 medium onion, finely chopped
1/4 cup vinegar
1/4 cup water
2 teaspoons sugar
1 pound asparagus, trimmed and cooked just until tender
PREPARATION:
Brown bacon in a skillet until crisp. Add onion, and cook until tender; drain well. Add vinegar and water; bring to a boil. Remove from heat, and stir in sugar. Pour dressing over asparagus, and serve warm.
Easiest but different way: roast them
Clean %26amp; trim them. Toss w/ a bit of olive oil %26amp; salt/pepper. Roast @ 350 degrees F for 5-10 mins. until tender but still a bit firm.
I don't know how to cook it, but I do know that when its cooked right %26amp; then has cooked ham wrapped around it, it's really good. I wish I could be more help.
Asparagus Omelet:
2 servings
1/2 lb thin asparagus, trimmed
2 tablespoons butter, divided
1 clove garlic, minced
1/2 lb mushrooms, sliced
4 eggs, lightly beaten
2 tablespoons milk
1/4 teaspoon salt, to taste
1/4 teaspoon dried basil, crushed or 1 teaspoon minced fresh basil (fresh preferred)
1 dash freshly ground black pepper, to taste
1. Cut trimmed asparagus in 1 inch pieces; cook in boiling salted water until tender, about 4 minutes.
2. Drain thoroughly.
3. Melt 1 tablespoon butter in 8 inch skillet, preferably one with non-stick lining, and saute garlic and mushrooms until done and moisture has evaporated.
4. Remove from pan and keep warm.
5. In a small bowl, combine eggs, milk, salt, basil, and pepper.
6. Melt remaining butter in skillet until foamy, swirling it around pan to coat evenly.
7. When hot enough that a drop of water sizzles when dropped in, pour in egg mixture.
8. Tip pan so eggs coat skillet evenly.
9. As eggs cook, periodically lift up cooked edges, tilt pan and let uncooked egg run underneath.
10. When eggs are cooked, but surface is still shiny, place asparagus and mushrooms on one side; slide out of pan, folding side without vegetables over top.
11. Serve immediately.
12. Also good sprinkled with a bit of grated Parmesan.
I just found one today..
20-30 small asparagus stalks
2-tablespoons butter
2-tablespoons olive oil
1/2 - 1 cup freshly grated parmesan cheese
Preheat oven to 350 degrees, trim the bottoms off asparagus then boil until done, about 5 minutes, place stalks on a large baking tray and cover with olive oil and parmesan cheese and bake for 15-25 minutes or until crust forms on the stalks......good eats!
2 tbls Italian dressing
1 tbls butter
pinch salt and pinch pepper
12 asparagus spears
Place in aluminum foil, grill over med heat 5 min turn another 5 min.
Deep Fried Asparagus
Even people who don鈥檛 like vegetables, like them deep-fried.
1/2 cup cornstarch
3/4 cup flour
1 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon white pepper
1/2 teaspoon celery salt
1/2 teaspoon baking soda
1 teaspoon baking powder
2 egg whites
2/3 cup cold flat beer
3 pounds [2 cups] raw, whole asparagus, cleaned and cut above white end
Mix all ingredients except asparagus in a bowl with a wire whisk until well blended.
Dip asparagus individually in the batter and deep fry them in at least 2-inches of peanut oil
for 2 minutes or until golden brown.
My favorite asparagus recipe is steamed in a paper bag! Clean the asparagus %26amp; break off the ends as you normally would. Put them in a paper bag and season to taste with sea salt %26amp; pepper. Slice a half lemon into paper-thin slices %26amp; put into the bag. Add a whole bay leaf. Fold the end of the bag 3 or 4 times until the fold almost touches the asparagus. Drizzle extra virgin olive oil on the outside of the bag %26amp; put it on a baking sheet. Put into a 350 degree oven for 20 minutes.
Take baking sheet out of the oven %26amp; using oven gloves %26amp; tongs, open the bag carefully. Discard the bay leaf and serve.
Why would someone want to wrap bacon around asparagus? that's way too strong. I can understand prosciutto, and do enjoy on occasion, but bacon, no way. I like to just blanch my asparagus, and either put a beurre blanc on it, or some hollandaise. another way to go, is sort of like what tom said, but go with tempura. it's a very light, airy batter that's really good. here's a recipe 7oz. Ice cold water, 1 egg yolk, and 2/3 cup A.P. flour. you just want to gently mix this together with a fork. it's ok if there are still small lumps of flour that are unmixed. but don't make it until you are ready to use it. then just dip your asparagus in this, and deep fry. so damn tasty.
