I remember having this some years ago but cannot quite put my finger on how it would work. As it is ';Pancake Day'; I thought it would be most apt. Any suggestions would be really appreciated. Galette of potatoes and exotic mushrooms
Preparation time less than 30 mins
Cooking time 1 to 2 hours
Ingredients
50g/2oz butter or vegan margarine
1 large onion, peeled and finely chopped
4 cloves of garlic, crushed
1 tbsp fresh sage and thyme, finely chopped
450g/1lb mixed mushrooms, sliced
450g/1lb potatoes, very thinly sliced (like making potato crisps!)
salt and freshly ground black pepper
melted butter, vegan margarine
or olive oil for brushing
To serve:
cranberry or redcurrant sauce
sprigs of parsley
Method
1. Preheat the oven to 230C/475F/Gas 9.
2. Melt the butter or margarine in a frying pan and gently fry the onions and garlic for about 5 minutes.
3. Mix in the chopped sage and thyme and mushrooms and cook for 3 minutes.
4. Grease a 22cm/9in loose-bottomed flan ring and layer up the potato slices and mushroom mixture, starting and finishing with a layer of potatoes and seasoning each layer as you go.
5. Brush the final layer of potatoes with melted butter or margarine and cover with foil.
6. Bake in preheated oven for 1-1录 hours until the potatoes are tender when pierced with a knife. Let the galette stand for 5 minutes before loosening with a palette knife and sliding onto a serving plate.
7. Warm a little cranberry or redcurrant sauce through gently in a saucepan and spoon onto the plate around the galette.
8. Garnish with parsley and serve with seasonal vegetables and a green vegetable stir fry.
Note: Use a mandolin or food processor with slicing disk to slice the potatoes very thinly so that they cook more quickly.Does anyone have a recipe for Galettes with blue cheese, asparagus and smoked ham or something similar?
GALETTES
3 sticks butter
4 eggs, large
1 tsp. vanilla
3 1/2 c. flour
1/2 tsp. baking powder
1 1/2 c. sugar
Waffle iron
Mix eggs and butter. Then blend all other ingredients together, mix well. Drop by teaspoonsful onto hot waffle iron, do not press flat. Cookie should be thick and fluffy. Makes 5 dozen. sdr

i was going to say what they said but i was too late.
as these recipes require consumption immediately after cooking, i was thinking that perhaps it would be best to enjoy this delicacy straight from the pan rather than in the post?

To make the ham and cheese galettes:
4 10-inch crepes
4 thin slices ham
1 cup shredded gruyere or swiss cheese
1 tomato, diced
2 tsp dijon mustard
1 tbsp melted butter
2 tbsp grated parmesan
Preheat oven to 350 degrees. Spread 1/2 teaspoon of mustard down on each crepe. Cover each crepe with one slice of ham and 1/4 cup of cheese. Add some tomato and fold over four sides to encase filling and make a square packet. Place each packet upside down on a greased baking sheet. Brush with melted butter and sprinkle with parmesan cheese. Bake for 10 to 15 minutes or until heated through.
A tasty Accompaniment:
1 bunch asparagus, cleaned and trimed
1 tsp olive oil
2 cloves of garlic, peeled and diced
salt %26amp; pepper
A perfect side for this is some saut茅ed asparagus. If the stalks are pretty thick, steam for 2-3 minutes first but if they are skinny asparagus spears, just saut茅 raw with the garlic for a few minutes in the olive oil, then sprinkle with salt and pepper. Serve on a plate with the galettes.
