You don't say what kind of chicken you have. If you have pieces, rub them with some olive oil, garlic, salt and pepper and parsley and roast them. Make sure to scrape the juices and brown bits into your mushroom sauce, if you want: it will make it richer and yummier. If it's chicken breast, dip into flour mixed with salt and pepper and saute it until golden brown. Then take the chicken out and proceed with mushrooms in the same pan.
Dice your onions and saute them with sliced mushrooms, a little dry white wine and salt and pepper. Steam the asparagus (until it turns bright dark green in salty water). Serve mushroom sauce with chicken, asparagus on the side. What's a good recipe combining chicken, asparagus, mushrooms, %26amp; onions?
Sounds great for a pie filling to me!
Or you could fry the onion, chicken and mushrooms together, add a little butter, flour and milk to make a white sauce (or you could make the white sauce separately and stir it in, but make sure you get all those lovely mushroom juices in it!) then stir in the cooked asparagus and serve it over rice or pasta. What's a good recipe combining chicken, asparagus, mushrooms, %26amp; onions?
