we eat a lot of asparagus, but i find myself preparing it the same two ways all the time. anyone have any simple, quick and tasty recipes to add some excitement to our veggie routine, lol. thanks : )Any simple yet delicious recipes for canned asparagus?
This is REALLY easy and it looks and tastes like something from a restaurant...
Start off by making a really basic thick white/cream sauce adding your canned asparagus, and put it aside.
Dice and cook chicken fillets ....you can also add capsicum, sun dried tomato and onion if you like.
Once cooked, add it all to the white sauce and put them in some store brought volovant cases. Heat in the oven topped with little grated cheese....serve with a side of salad. YUMMY!!
Also canned asparagus always goes fantastically in a home made quiche.Any simple yet delicious recipes for canned asparagus?

I love it and my favourite way is to drain it well and have it as is in sandwiches.
It is expensive here so whole spears are treasured treats.
This is my favourite way
Rolls. Wrap Asparagus spears, or Seafood sticks, Shredded chicken, etc in a slice of buttered bread at the diagonal.
For chunks of asparagus, a little cheaper, just mash and add some mayonnaise, spread on top of a slice of buttered bread, add some finely sliced lettuce and top with another slice of buttered bread, remove side crust an cut into 2 or 3 finger.
Both of these should be neat and tidy to serve to guests to impress.
canned asparagus is sinful and evil and comes from the devil. it's hard to make my brain go there. BUT. If I had to make something out of it, I'd do the following:
roast eggplant by peeling it, slicing it 1 inch thick, brushing good olive oil over it, and roasting in a 400 degree oven.
brown an equal amount of breakfast sausage.
open a an equal amount of canned artichoke hearts. chop into 1/2 inch pieces
open a very small can of asparagus, and cut into 1/8 inch pieces.
mix it all up and roll in sheets of cooked spinach pasta. Steam to heat, cut into spiral rolls, and serve as a side dish.
Canned asparagus is not very good. But if a can of asparagus made it through my door, I'd probably drain the asparagus, put it in the food processor with some salt, pepper, butter and cream and try to make a simple creamed asparagus soup.
I did that with canned peas once when I was in a hurry. I needed soup to go with ham sandwiches. It was edible. My husband actually thought it was good. I won't be making it again.
canned? it's no longer asparagus!
