In a large vessel, add 2-3 tsp of butter and add all these chopped veggies (3-4 cups in all). add 1/2 cup chopped potatoes, celery and leeks. stir with some crushed black peppers, dried dill and then add 7-8 cups of water and let boil for 20-30 minutes till the veggies are soft. use a pressure cooker for faster cooking. Then mash all the veggies, add more water if needed, add salt and cayenne pepper, 1-2 tsp butter, 1/4 cup milk and 3-4 tsp all purpose flour for thickening. My favorite--easy and delightfully delicious thing to do with broccoli (and asparagus and spinach and cauliflower) is to saute it in olive oil with lots of garlic, and then plop it right on top of pasta. Nothing better!!!

Cook any veggie until it's almost tender and fry it in a non-stick pan with a bit of margarine (or olive oil) salt, chopped peanuts and some unsweetened dried coconut. Toss it all around until the peanuts get browned. If you are daring, use the Indian spice asafoetida (hing). It smells like onions and feet. Powerful without leaving garlic breath. Warm it in the oil before adding the veggies and nuts.
