What's your best asparagus recipe?

I have two bunches of fresh asparagus and i nned to cook it. What's your suggestion?What's your best asparagus recipe?
steam it first for 3 mins, then pat dry with towel and add to skillet with 1 tsp butter 1 tsp olive oil, 1/2 tsp garlic and cook on med heat for 3 to 5 minutes..be sure all of it gets coated with butter and oil..then sprinkle with salt and pepper..and for a bit of spice add red pepper flakes.What's your best asparagus recipe?
I like mine super simple. I drizzle with olive oil, add kosher salt and black pepper, then throw them in a HOT oven (450) until they are just tender.

I just steam it until crisp-tender, and make a hollandaise sauce to go over it. My hubby coats them in dark sesame oil with garlic and grills them. I like my asparagus, but his are awesome.

Ingredients





4 bunches asparagus


4 tbsp chopped chives


200g strong blue cheese, roughly chopped


1 cup self-raising flour


60g butter, melted


5 eggs


1 cup milk


1 tsp cracked black pepper


2-4 spring onions, chopped





How to Prepare :








1. Lightly steam the asparagus, until tender.


2. Combine the remaining ingredients, except for the spring onion, in a bowl.


3. Arrange the asparagus neatly in a buttered Swiss-roll tin. You should have enough asparagus to let the spears sit in two layers.


4. Pour on the batter and sprinkle with the chopped spring onions.


5. Bake for 30 minutes in a pre-heated 180掳C oven, until lightly browned on top. Serve warm or cold.





Tips





* You can also cook the frittata in the centre of a pre-heated hooded barbecue, with the outside burners on moderate, and the central burners turned off. Put the hood down and bake for around 15 minutes. Reduce the burners to low and bake for another 10-15 minutes

Try broiling it, first rolled with fresh lemon juice, lemon zest, olive oil, salt, and pepper. About three minutes under the broiler, shake and place back under the broiler just until it starts to char very slightly.
I love asparagus with hollandaise sauce....





INGREDIENTS:





1 large bunch of asparagus





4 egg yolks





2 teaspoons fresh lemon juice





1 tablespoon water





1 tablespoon Dijon mustard





陆 pound butter, melted and warm





METHOD:


Bring a pot of salted water to a boil. Trim the asparagus. Place the asparagus in the water and blanch for about 4 to 6 minutes. Remove the asparagus from the water and season with salt and pepper. While the asparagus are blanching, prepare the sauce. In a stainless steel bowl set over a pot of simmering water over medium heat, whisk the egg yolks with the lemon juice, water, and mustard together. Season with salt and cayenne. Whisk the mixture until pale yellow and slightly thick. Be careful not to let the bowl touch the water. Remove the bowl from the pot and whisking vigorously, add the butter, 1 teaspoon at a time, until all is incorporated. Place the asparagus on a platter and spoon the Hollandaise sauce over the top.
i have two favorites:


melt butter and olive oil in a skillet, add asparagus, cook for about five minutes, then add about half cup of white wine and 3 cloves of minced garlic.


simmer for about ten minutes.


number 2:


put asparagus in the bottom of a casserole dish, drizzle with olive oil and salt and pepper. top with sliced tomatoes (fresh if available-stewed tomatoes if not) drizzle with more olive oil and italian seasoning. bake for about fifteen minutes on 350 then take out and top with the bagged italian cheese blend. and return until cheese melts.
fresh on da grill...they turn sweet w/ a really great flavor.
You can grill them with very light olive oil on them or try roasting them for about 3-5 minutes in a 350 degree oven with olive oil and salt /pepper. I like them better that way than blanching. Good Parmesan cheese or Swiss/Gruyere cheese make a good companion.
saute it in olive oil and fresh garlic,when done to your liking-sprinkle sesame seeds on top ENJOY

Blanch them first, then wrap in bacon (or pancetta but not prosciutto) and roast in the oven. When browned, remove and season with lemon juice, salt and pepper.

I also love to grill them till al` dente. Often marinate them with an Italian style dressing and then grill them. The problem is that they don't marinate because the tough skin prevents the marinade from getting into the stalk. If you just use a vegetable peeler you can carefully peel the tougher peel away from the stalk and this will allow a marinade to penetrate. No more than half an hour if vinegar is involved. The acidity of the vinegar actually will cook the delicate stalk.





Once marinated...go get a glass of wine and grill that nice asparagus. Just mark it as not to overcook it. Once marked, the asparagus will continue to keep cooking due to ';carryover heat';.





A nice easy dip is soy sauce aioli. You can cheat by adding straight soy sauce to mayonnaise to taste. Aioli is a simple garlic sauce made from raw eggs, oil, etc..but I'd just use the mayo soy sauce style if in a pinch.
Roasted Asparagus





asparagus


olive oil


salt or garlic salt


pepper








Preheat oven to 450潞F.





1. toss asparagus with olive oil.


2. Salt and pepper them.


3. Arrange in an even layer on pan.


4. Roast until asparagus is 10-15 minutes.
