Anybody know a good recipe for a sauce over asparagus?

i have a lemony, creamy sauce in mind...





ps: is it against the rules to mix whipping cream with lemon juice?Anybody know a good recipe for a sauce over asparagus?
hollandaise sauce





Hollandaise sauce is delicious over asparagus or other cooked vegetables, fish dishes, and Eggs Benedict.


1/2 cup butter


3 large egg yolks


1 tablespoon plus 1 teaspoon of lemon juice


1/8 teaspoon salt


dash cayenne pepper or hot pepper sauce


2 tablespoons hot water


finely chopped fresh parsley, if desired


Heat butter in a heavy saucepan until hot and foamy, but not browned. In a small bowl, whisk or beat egg yolks with lemon juice, salt, and cayenne pepper or hot sauce. Gradually beat in butter, then water. Return mixture to saucepan and beat over very low heat until mixture is slightly thickened. Serve immediately or let stand over warm water for up to 30 minutes.Anybody know a good recipe for a sauce over asparagus?
p.s. response- nope if added slowly and in small amounts. Really hard to measure, but good luck.





I like to take my asparagus and steam it with fresh lemons and lemon and herb seasoning in the water.





While steaming, Microwave 1/2 stick of butter till melted then add the juice from 1 small REAL lemon (not that stuff that comes in a lemon shaped container). Mix together.





Once asparagus is steamed remove from stove- shake off excess water and then put in bowl of butter and lemon juice. Use your hand and rotate the asparagus around in the bowl until each piece is fully covered. the lemon and butter mixture isn't a sauce, but it does make a really delicious glaze. Enjoy!
Mix equal amounts of butter %26amp; flour Then add milk to make a white sauce. Then add a few drops of lemon juice. I use 1/3 cup flour to 1/3 cup butter melted Then add 1 cup milk %26amp; stir till it thickens. Then add a little bit of lemon juice at a time %26amp; taste it before adding more. I added too much lemon juice one time %26amp; it was so sour. Add salt %26amp; pepper to the white sauce.
Your mixture will probably ';break'; or curdle.

Its traditional. To make from scratch, does require some talent. BUT don't let that intimidate you.





LOTS of folks heat - NOT boil - REAL mayonnaise and add a tiny amount - less-than-a-drop - maybe the end of a toothpick - dipped in some egg shade food coloring. This gives the sauce that wonderful yellow color.

I love to mix some extra virgin olive oil with balsamic vinegar and fresh ground pepper. Once mixed pour over the asparagus, also I like to season with a little garlic salt. It's simple and healthy!
