Asparagus recipe ideas?

I have a whole bunch of asparagus and I am thinking of roasting it.....how ever I dont have any idea wht to serve it with..





I have chicken at home...any recipe ideas?

I love roasting asparagus and serving it on the side with chicken piccata. Below is the recipe I use. I serve the chicken %26amp; asparagus over angel hair pasta. The butter/lemon sauce is so yummy with the asparagus. You don't need the parsley if you don't want to bother with it. And a piece of crusty bread is nice with this too...

2 skinless and boneless chicken breasts, butterflied and then cut in half


Sea salt and freshly ground black pepper


All-purpose flour, for dredging


6 tablespoons unsalted butter


5 tablespoons extra-virgin olive oil


1/3 cup fresh lemon juice


1/2 cup chicken stock


1/4 cup brined capers, rinsed


1/3 cup fresh parsley, chopped





Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.


In a large skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.





Into the pan add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.Asparagus recipe ideas?
A one casserole dish. I take the asparagus and soak them in lemon juice about 10 minutes is all, you do not want to much flavor. Then some fresh garlic and a little butter or olive oil , which ever you prefer. Lay them in the bottom of a casserole pan. Lay some fresh chicken or turkey tenders on them. Next I like to lay a layer of stuffing on top. Then you bake it at 350 for an hour or and hour and a half depending on how much you have. The juice form the chicken/turkey adds flavor to the asparagus, and visa versa. The stuffing keeps everything moist.


Its hot and easy. Zucchini also works well!
You could make an asparagus soup with a chicken salad. Sorry I don't know the recipe for the soup off the top of my head (I'm at work), but I'm sure if you look up Martha Stewart's website she would have one for you.
I like to blanch my asparagus and serve it with a light homemade mayonnaise with dill or watercress or grill it and serve with some juicy burgers!





I ate it just as is, with nothing else or with a salad (arugula), but people in my family like it with, burgers...or fish, or grilled chicken.

OK, Here is one that i have to cook at least 3 times a month.





Clean the asparagus. Cutting the ends to what you want to cook.





In a saute pan, cover the bottom with Olive oil,


A BIG heaping spoon full of crushed (or Minced) Garlic


heat that slowly until it starts to brown.


add about a teaspoon of Oregano


add about a teaspoon of Basil


Add a couple sliced up roasted red pepper (long thin slices)


Add about a half a cup of sliced Pepperoni (or salami, or my favorite Prosciutto....)


Add the Asparagus


cook slowly until the asparagus is done to your tenderness...





Serve that with your chicken..... and if you don't feel like cooking the chicken and want a quick easy dinner?





If you want, you can do like my Namma and scramble some eggs and fold the asparagus inside and make sammies out of it... It is best on nice freshly sliced Italian bread.
Chicken Oscar. Cut up and debone chicken pieces. Saute them in half butter, half oo til browned. plate a piece or two, top with lump crab meat, a few spears of steamed asparagus and bernaise sauce. A crust of bread, a knob of butter and some crisp white wine should do you.
I'm italian and here a typical plate is pasta or ';risotto';(rice) with asparagus and shrimps.I suggest you to try it!





This is a nice recipe but try it also without tomatoes....in my opinion is a little bit better

Anyway, you can also put them in a soup...it'd be very healthy!

I like to saute my asparagus in just a little olive oil and salt until tender (or steam until tender - be sure to salt) - servie with any dish!


I also like to add to a pasta dish I make with white cooking wine, sun-dried tomatoes and artichoke hearts - YUM
i like to blanch it, and roll it up inside chicken breast cutlets, with some prosciutto and provolone cheese.





if you want to roast it by itself, toss it in a little olive oil to coat, and spread it own on a sheet pan, salt and pepper to taste, and even a little parmesan cheese if you want....350 for about 10-15 mins until dark green and just tender...





remove from the oven toss with a little bit more olive oil and garlic.....delish!
