Asparagus recipe for someone on a diet! Easy 10 points!?

No recipe needed...just steam the asparagus for a few minutes until it is ';crisp-tender';. Season with lemon pepper and a squeeze of fresh lemon. Add little bit of kosher salt and you are good to go!





Another way I like it is to roast it. I trim them, lay them on a baking sheet, and then spray them with olive oil spray. Roast them on 400 F for 10-15 minutes. Yummy!





Asparagus casserole is tasty, but not exactly diet friendly. Butter is tasty on asparagus as well, but, again, not very diet friendly. The quiche recipe given to you sounds delicious, but watch the fat and calories...not diet friendly in any way!

GRILLED ASPARAGUS with provencial herbs and low fat herb dipping sauce





Jumbo spears of asparagus are coated with olive oil, cajun seasoning, rosemary and thyme, grilled and served with a dipping sauce.





Ingredients:





FOR THE DIPPING SAUCE


Chopped parsley 1/2 cup


Basil, chopped 1/4 cup


Onion, chopped 3 tbsp.


Garlic, chopped 1 clove


Low-fat Mayonnaise 1/2 cup


Low-fat Ranch dressing 1/2 cup


Nonfat sour cream 1/2 cup


Soft tofu, crumbled 1/2 cup


Tarragon, minced 1 tbsp.


Sea salt Pinch


Ground pepper Pinch





FOR THE ASPARAGUS


Jumbo Asparagus 16 spears


Olive oil 1/4 cup


Cajun seasonings 2 tbsp.


Sea salt 1/8 tsp.


Rosemary, chopped 1/2 tsp.


Thyme, chopped 1/2 tsp.





Directions:





1. Combine the parsley, basil, onion and garlic in a food processor and pulse to chop finely. Add the low fat mayonnaise, ranch dressing, sour cream and tofu and process until well blended. Stir in the tarragon, salt and pepper. Refrigerate.


2. Peel the asparagus and coat with remaining ingredients. Heat a gas grill to HIGH heat. Grill the asparagus for 3-4 minutes, turning often until blistered and cooked through. Serve asparagus on a platter with the herb dipping sauce.

1. 1 pound fresh asparagus, trimmed and cut into 1/2 inch pieces


2. 10 slices bacon


3. 2 (8 inch) unbaked pie shells


4. 1 egg white, lightly beaten


5. 4 eggs


6. 1 1/2 cups half-and-half cream


7. 1/4 teaspoon ground nutmeg


8. salt and pepper to taste


9. 2 cups shredded Swiss cheese

2. Cooking Directions





1. Preheat oven to 400 degrees F (200 degrees C). Place asparagus in a steamer over 1 inch of boiling water, and cover. Cook until tender but still firm, about 2 to 6 minutes. Drain and cool.


2. Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.


3. Brush pie shells with beaten egg white. Sprinkle crumbled bacon and chopped asparagus into pie shells.


4. In a bowl, beat together eggs, cream, nutmeg, salt and pepper. Sprinkle Swiss cheese over bacon and asparagus. Pour egg mixture on top of cheese.


5. Bake uncovered in preheated oven until firm, about 35 to 40 minutes. Let cool to room temperature before serving.





Yield: 12 servings
Toss with a little olive oil and salt (no pepper yet) and lay on a cookie sheet and roast in a 350 oven for about 1/2 hour (when it just starts to brown)





Add a little pepper after you remove it from the oven
Place on baking sheet. Drizzle olive oil over it. Add salt and pepper. Roast on 450 for about 30 minutes. It is so good and good for you. Enjoy!!
fresh asparagus. just blanch it in boiling salted water for one minute. drain it on paper towels. sautee in a non stick pan with one teaspoon olive oil till hot about 3 minutes.
I spray mine with the 0 calorie butter and sprinkle with garlic powder and saute them for about 5 minutes.
grilled with a sprinkling of lemon, kosher salt, and pepper. easy peasey
