Vegan Recipes for White Asparagus?

We have A LOT of cans of white asparagus that expires on the 30th of this month... I need to use it up ;). I eat at least a can a day... I like it.





I have made Asparagus soup and thats really good. What else can I do with it??Vegan Recipes for White Asparagus?
In spain, I had it -- I think it was just boiled and seasoned with salt and olive oil and then drizzled with balsamic vinegar that had been reduced to a glaze. Served with crusty bread.

How about making a white bean / white asparagus humus? Try equal mounts of beans and asparagus, salt, garlic, olive oil - whiz it up in the food processor and serve it with crisps. Let the asparagus drain well. Let me know if it works!
Break of the ends and blanch or par boil the Asparagus. Then lightly saute in garlic butter and season with rock salt and back pepper.
use it as a vegetable/garnish on your plates....just because the can expires, doesn't mean you will if you don't use by then
