Differnt asparagus recipes?

i have a bunch of asparagus and need to know of some good ways to cook it?Differnt asparagus recipes?
ASPARAGUS SOUP





3 bunches of asparagus


1 quart of cream or milk


1 tablespoon of butter


1/2 tablespoon flour





Boil the asparagus in 1 quart salt water till tender. Drain water off, then add cream. Rub butter and flour together and add before taking from the stove. Add salt and pepper to taste. Serve with toasted bread or crackers.











ASPARAGUS CASSEROLE





2 cans asparagus, drained well


1 can Campbell's cream of mushroom soup


1 stick real butter


1 sleeve Ritz crackers or 1 pkg Waverly crackers


1 8oz package Kraft shredded cheddar cheese





Place the two cans of the drained asparagus on the bottom of a casserole dish. Spread the Cream of Mushroom Soup across the asparagus. Then sprinkle the Shredded Cheddar Cheese across the asparagus.


Meanwhile, in a microwavable bowl melt the stick of butter, crumble the Ritz or Waverly crackers and add to the melted butter, mixing well. Cover the casserole with the crumbled cracker mixture.





Bake in a 350掳F degree oven for 25-30 minutes or until the cracker topping is golden brown.








CHICKEN AND ASPARAGUS STIR-FRY





1 lb. boneless chicken breasts


1 egg white, lightly beaten


1 lb. fresh asparagus


3 tbsp. low-sodium soy sauce


1 tbsp. cornstarch


1/4 c. dry sherry


2 tsp. sesame oil


2 tbsp. vegetable oil


1 tbsp. minced garlic


1 tbsp. minced fresh ginger


1/4 c. chicken broth


1 red pepper, diced


1/2 c. chopped scallions


1/2 c. dry roasted cashews


3 c. cooked brown or white rice





1. Cut chicken into 1 inch squares. Combine with beaten egg white and toss lightly. Set aside.


2. Trim woody bottom ends from asparagus and discard. Cut asparagus into 1 1/2 inch pieces.





3. In a small bowl, combine soy sauce, cornstarch, sherry and sesame oil and stir well.





4. In a large skillet or wok, heat 1 tablespoon vegetable oil. Add garlic and ginger and stir-fry 2 minutes. Add asparagus and stir-fry 1 minute longer. Add chicken broth, cover and cook 2 minutes or until asparagus is crisp-tender. Remove asparagus and wipe pan.





5. Heat remaining tablespoon vegetable oil. Add chicken and stir-fry until opaque. Add asparagus, red pepper, scallions and cashews. Stir sauce and add to pan. Cook until mixture thickens. Serve over rice. Makes 4 servings.Differnt asparagus recipes?
Asparagus %26amp; Chicken Pasta ingredients list:





16 oz packet Pasta(e.g. Penne).


8 x Asparagus Sprigs.


4 x Chicken breasts, skinned and.


2 teaspoons of Olive oil.


陆 teaspoon of Basil Salt and pepper.


陆 cup of Parmesan cheese.


2 teaspoons of White wine.


Instructions for Asparagus %26amp; Chicken Pasta:





1. Cook the pasta in a pan of boiling water for about 8 minutes.


Meanwhile:


2. Trim the Asparagus, cut in to 2 inch pieces and set aside.


3. Cut the chicken in to strips, and fry in the oil over a medium heat. Cook for about 3 minutes.


4. Add the wine, cheese and seasoning to the chicken.


5. For the last 3 minutes of cooking, add the Asparagus pieces to the pasta.


6. Drain the pasta and asparagus. Toss with the chicken and serve.
ASPARAGUS ROLL UPS





1 dozen asparagus spears, trimmed


12 slices provolone cheese


12 thin slices prosciutto


4 fresh cloves garlic, finely minced


2-3 tablespoons fresh parsley, minced


2 tablespoons Parmesan


2 tablespoons fresh basil


1/2 teaspoon extra virgin olive oil


pinch of hot red pepper flakes (optional)





Trim asparagus and discard tough ends. Steam or boil asparagus in 3/4 inch of salted water for about 5 minutes. Drain well.


In a food processor, finely chop garlic, parsley, Parmesan and basil. (Add a small pinch of hot red pepper flakes, if desired). Process to a spreadable paste, leaving some small chunks.





Spread inside each cheese slice with the paste, using enough to coat generously. Roll 1 slice cheese tightly around each asparagus. Roll each with a slice of prosciutto and refrigerate until ready to serve.
place asparagus in casserole dish, drizzle olive oil. place fresh sliced tomatoes all over asparagus. drizzle tomatoes with olive oil, then season with italian seasonings, salt and pepper


Bake 25 min. on 350, then top with italian shredded cheese and finish baking til cheese is bubbly.
Snap off the stems drizzle with olive oil, salt and pepper and gently toss to coat. Place in a roasting pan sprinkle bread crumbs and parmesan cheese over the top and bake @ 350 for about 20 minutes. very delicious !
put asparagus in press and seal then put cheese on top of the asparagus put in the microwave and it steams it for you





another thing that is good is pickled asparagus i hate pickles but i love pickled asparagus
Snap off the bottoms. Cut on a strong diagonal slant (instead of cross wayss) into one-inch pieces. Put 1 to 2 Tbsp. butter in a skillet and stir-fry on high for 3 to 5 minutes.
