I like mine steamed with a lemony hollandasie sauce.





Or steam it then toss in a skillet with a little cooked chopped bacon (leave just a bit of the bacon fat in there) and toss it around in the hot skillet, add a little salt and some pine nuts (I also do this with green beans)





Or you can take about 12 pieces of bread, Remove the crust and press flat. Make a mix of cream cheese (1/2 block), cooked crumbled bacon, and grated parmesan cheese.





Spread a little bit of the cream cheese mix on the bread, add about 3 asparagus spread, and fold the bread around it. Seal with melted butter. Place seam side down and brush a bit more butter on top. Sprinkle on a little paprika for color. Bake t 350 until the bread is a bit browned and crisp.What are some good recipes you can make using asparagus?
ROASTED VEGETABLES





3/4 bunch asparagus (about 8 medium spears)


2 portobello mushroom caps, sliced 1/4'; thick


1 medium onion, cut in 1/4';-thick rings


1/2 Tbsp extra-virgin olive oil


Salt and pepper





Preheat the oven to 400F. Remove the woody ends of the asparagus by gently bending each stalk until it breaks 鈥?it'll naturally snap off at the right spot. In a baking dish, toss the vegetables with the olive oil and season with salt and pepper. Roast for 12 to 15 minutes, until the vegetables have developed a light brown crust.
Prosciutto Wrapped Asparagus


1/2 pound prosciutto, sliced


1/2 (8 ounce) package Neufchatel cheese, softened


12 spears fresh asparagus, trimmed





1. Preheat oven to 450 degrees F (230 degrees C).


2. Spread prosciutto slices with Neufchatel cheese. Wrap slices around 2 or 3 asparagus spears. Arrange wrapped spears in a single layer on a medium baking sheet.


3. Bake 15 minutes in the preheated oven, until asparagus is tender.





Asparagus Swiss Quiche


10 bacon strips, diced


1/2 cup chopped onion


1 pound fresh asparagus, trimmed


1 cup shredded Swiss cheese


1 tablespoon all-purpose flour


1/4 teaspoon salt


1/8 teaspoon pepper


1 (9 inch) unbaked pastry shell


3 eggs


1/2 cup half-and-half cream





1. In a skillet, cook bacon over medium heat until crisp. Remove with a slotted spoon to paper towels; drain, reserving 1 tablespoon drippings. In the drippings, saute onion until browned; drain.


2. Cut eight asparagus spears into 4-in.-long spears for garnish. Cut remaining asparagus into 1-in. pieces. In a saucepan, cook all of the asparagus in a small amount of boiling water until crisp-tender; drain.


3. In a bowl, toss the bacon, onion, asparagus pieces, cheese, flour, salt and pepper. Pour into pastry shell. In a bowl, beat eggs and cream; pour over bacon mixture. Top with asparagus spears. Bake at 400 degrees F for 30-35 minutes or until a knife inserted near the center comes out clean and crust is golden brown. Let stand for 10 minutes before cutting.





Asparagus with Garlic and Onions


1/4 cup water


1/2 pound fresh asparagus, trimmed


1/2 cup diced white onion


3 tablespoons butter


salt and black pepper to taste


2 cloves garlic, thinly sliced





1. Pour water into a skillet. Place asparagus and onion in the skillet. Bring water to a boil over medium heat. Cover skillet and steam asparagus and onion 2 to 5 minutes, just until slightly tender. Add a few tablespoons of extra water, if needed, to maintain steam.


2. When water has steamed off, immediately place butter in skillet. Continue cooking until onions and asparagus are lightly browned. Mix in garlic, and continue cooking about 30 seconds. Season with salt and pepper to taste.





Pan-Fried Asparagus


1/4 cup butter


2 tablespoons olive oil


1 teaspoon coarse salt


1/4 teaspoon ground black pepper


3 cloves garlic, minced


1 pound fresh asparagus spears, trimmed





1. Melt butter in a skillet over medium-high heat. Stir in the olive oil, salt, and pepper. Cook garlic in butter for a minute, but do not brown. Add asparagus, and cook for 10 minutes, turning asparagus to ensure even cooking.





Grilled Asparagus


1 pound fresh asparagus spears, trimmed


1 tablespoon olive oil


salt and pepper to taste





1. Preheat grill for high heat.


2. Lightly coat the asparagus spears with olive oil. Season with salt and pepper to taste.


3. Grill over high heat for 2 to 3 minutes, or to desired tenderness.
